Ingredients:
- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- Food coloring assorted colors
- 1/2 cup powdered sugar for filling
- 1/4 cup unsalted butter, softened for filling
- 1 teaspoon vanilla extract for filling
Instructions:
Mix the cocoa powder, salt, and flour together in a bowl using a whisk
Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy
Mix the butter and vanilla extract together well after adding the egg yolk
Mix the dry ingredients into the wet ingredients one at a time until a dough forms
For each color, separate the dough into its own piece
Add a few drops of food coloring to each piece and mix them together until the color is spread out evenly
For about 30 minutes, put each color of dough in the fridge while its wrapped in plastic wrap
Warm the oven up to 350F 175C and put parchment paper on a baking sheet
Spread out each color of dough on a floured surface until its about 1/4 inch thick
With cookie cutters, cut shapes out of each color of dough and put them on the baking sheet that has been made ready
Put the cookies in an oven that is already hot for 8 to 10 minutes
After baking, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool completely
Melt the butter and vanilla extract in a bowl
Add the powdered sugar and beat until the mixture is smooth and creamy
After the cookies have cooled, put some filling on the bottom of one and then put a different-colored cookie in between them
Do the same steps for the other cookies to finish filling and sandwiching them
Serve these bright chocolate sandwich cookies and enjoy them
