Ingredients:
- 2 ripe pears, peeled, cored, and diced
- 1 cup pistachios, shelled and chopped
- 1 cup dark chocolate chips or chunks
- 1/2 cup coconut oil
- 1/2 cup honey or maple syrup
- 4 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon sea salt
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
Instructions:
Preheat oven to 350F 175C
Grease and line three 6-inch cake pans with parchment paper
In a saucepan, melt the coconut oil and dark chocolate over low heat, stirring until smooth
Remove from heat and let cool slightly
In a large bowl, whisk together the eggs, honey or maple syrup, vanilla extract, and sea salt until well combined
Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously
Sift in the cocoa powder, baking powder, and baking soda
Mix until smooth and well combined
Fold in the diced pears and chopped pistachios until evenly distributed throughout the batter
Divide the batter evenly among the prepared cake pans and smooth the tops with a spatula
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean
Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely
Once cooled, assemble the cake layers on a serving plate, stacking them with a layer of frosting optional between each layer
Decorate the top of the cake with additional chopped pistachios and pear slices, if desired
