Ingredients:
- - 8 oz elbow macaroni
- - 1 tablespoon olive oil
- - 8 oz chorizo sausage, casing removed, crumbled
- - 1/2 cup onion, finely chopped
- - 2 cloves garlic, minced
- - 2 tablespoons all-purpose flour
- - 2 cups whole milk
- - 2 cups shredded sharp cheddar cheese
- - 1 cup shredded Monterey Jack cheese
- - Salt and black pepper to taste
- - 1/2 teaspoon smoked paprika
- - 1 cup corn kernels, fresh or frozen
- - 1/4 cup breadcrumbs optional
- - Chopped fresh parsley for garnish
Instructions:
Cook the macaroni according to package instructions
Drain and set aside
In a large skillet, heat olive oil over medium heat
Add crumbled chorizo and cook until browned
Remove excess oil if needed
Add chopped onion and minced garlic to the skillet
Saut until the onion is soft and translucent
Sprinkle flour over the chorizo mixture and stir well to combine
Gradually pour in the milk while continuously stirring to avoid lumps
Cook until the mixture thickens
Reduce heat to low and add shredded cheddar and Monterey Jack cheeses
Stir until the cheeses are melted and the sauce is smooth
Season the cheese sauce with salt, black pepper, and smoked paprika
Add cooked macaroni and corn kernels to the cheese sauce
Stir until well coated and heated through
If desired, transfer the macaroni and cheese to a baking dish, sprinkle breadcrumbs on top, and broil until golden brown and crispy
Garnish with chopped fresh parsley and serve the Macaroni and Cheese with Chorizo and Corn hot
