Chicken Under a Brick

Deep French Kissing Niagara Falls

Chicken Under a Brick is a classic Italian cooking method that results in juicy, flavorful chicken with crispy skin. The weight of the brick helps to flatten the chicken, ensuring even cooking and delicious results.

Ingredients:

  • 1 whole chicken about 3-4 pounds
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2-3 cloves garlic, minced
  • 1 lemon, thinly sliced
  • Fresh herbs such as rosemary or thyme
  • Brick wrapped in aluminum foil

Instructions:

Warm up the grill over medium-high heat

Put a lot of salt, pepper, and minced garlic on the inside and outside of the chicken

Along with fresh herbs and lemon slices, put them inside the chicken

Cover the chicken in olive oil and rub it all over the skin

Lay the chicken on the grill with the breast side down

Put the brick wrapped in foil on top of the chicken to make it heavier

For 30 to 40 minutes, or until the skin is golden brown and crispy and the chicken reaches 165F 75C inside, put it on the grill

Carefully take off the brick and use tongs to flip the chicken over

Put it back on the grill for another 10 to 15 minutes, or until the other side is golden brown and fully cooked

Take the chicken off the grill and let it rest for a few minutes

Then you can cut it into pieces

If you want, you can serve it hot with extra lemon slices and fresh herbs on top
