Taco Chopped Salad

The flavors of a classic taco are mixed with the freshness of a salad to make this Taco Chopped Salad, a tasty and filling meal. You can make it quickly for lunch or dinner.

Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 head iceberg lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup canned corn, drained
  • 1 cup black beans, drained and rinsed
  • 1/2 cup red onion, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup tortilla strips
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 1/4 cup ranch dressing
  • Salt and pepper to taste

Instructions:

In a skillet, brown the ground beef over medium-high heat until fully cooked

Drain any excess fat

Add the taco seasoning to the cooked beef according to package instructions

Stir well and let it simmer for a few minutes

Set aside

In a large salad bowl, combine the chopped iceberg lettuce, cherry tomatoes, canned corn, black beans, and red onion

Add the seasoned ground beef to the salad mixture and toss everything together

Top the salad with shredded cheddar cheese and tortilla strips

In a small bowl, mix together the sour cream, salsa, and ranch dressing to create the dressing for the salad

Drizzle the dressing over the salad and toss to coat all the ingredients evenly

Season the salad with salt and pepper to taste

Serve the Taco Chopped Salad immediately, garnished with extra tortilla strips if desired
