Ingredients:
- 2 cups white chocolate chips
- 1 can 14 ounces sweetened condensed milk
- 1/2 cup canned pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup graham cracker crumbs
- 1/4 cup chopped pecans optional
Instructions:
Line an 8x8-inch square baking pan with parchment paper, leaving some overhang on the sides for easy removal
In a microwave-safe bowl, combine the white chocolate chips and sweetened condensed milk
Microwave in 30-second intervals, stirring after each, until the mixture is smooth and fully melted
Stir in the pumpkin puree, pumpkin pie spice, vanilla extract, and salt until well combined
Pour the fudge mixture into the prepared pan and spread it evenly
Sprinkle the graham cracker crumbs and chopped pecans if using over the top of the fudge, pressing them lightly into the surface
Refrigerate the fudge for at least 2 hours, or until it is set and firm
Use the parchment paper overhangs to lift the fudge out of the pan, and then cut it into squares
