Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 cup coconut oil, melted
- 1/4 cup honey
- 1 large egg
- 1 tsp vanilla extract
Instructions:
In a mixing bowl, combine almond flour, coconut flour, baking soda, salt, and spices
In a separate bowl, whisk together melted coconut oil, honey, egg, and vanilla extract
Pour the wet ingredients into the dry ingredients and mix until a dough forms
Wrap the dough in plastic wrap and refrigerate for 30 minutes
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
Roll out the chilled dough between two sheets of parchment paper to 1/4-inch thickness
Use cookie cutters to cut out your desired shapes and transfer them to the prepared baking sheet
Bake for 8-10 minutes, or until the edges are golden brown
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Decorate with Paleo-friendly frosting if desired
