Instead of frying them, these baked salmon croquettes are a better choice for your health. They taste great as an appetizer or main dish because they are full of flavor from fresh herbs and lemon juice.
Ingredients:
- 2 cans 14
- 75 oz each salmon, drained and flaked
- 1 cup breadcrumbs
- 1/4 cup chopped green onions
- 2 tablespoons chopped parsley
- 2 tablespoons lemon juice
- 2 eggs
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Cooking spray
Instructions:
Preheat oven to 375F 190C
In a large bowl, combine flaked salmon, breadcrumbs, green onions, parsley, lemon juice, eggs, mayonnaise, Dijon mustard, garlic powder, salt, and pepper
Mix until well combined
Shape the mixture into small croquettes and place them on a baking sheet lined with parchment paper
Spray the croquettes lightly with cooking spray
Bake in the preheated oven for 20-25 minutes or until golden brown and crispy
Serve hot with your favorite dipping sauce
